Biñan
Biñan is one of the few progressive places in the Philippines where one still sees a lot of age-old traditions being practiced and are very much a part of the day-to-day life of the people. These living traditions abound, invites visitors and residents alike to experience Biñan, fully and intensely. Through the sense of taste and touch, sight and hearing, to the sense of smell – be immersed in its beauty and grace.
For instance, any modern Biñanense knows the distinct taste and texture of the famous Puto Biñan (rice cake). Anyone passing by Barangay Canlalay would be lured by the scent of the native Pinipig (flattened glutinous rice). A small kid would wait eagerly for the sound of the sorbetero’s (ice cream man’s) bell to have a taste of his sorbetes (ice cream), the same homemade ice cream that the kid’s grandparents surely ate when they were children many decades ago.
The sensuous experiences Biñan has to offer have stories underneath – like the well-kept secret of the warm and filling Pospas and the delicious Puto Biñan and how they originated and how they have survived even in this modern age. Hearing the stories of the people whose lives are inseparable from these traditions puts depth and value to the experiences, such as the pride of sombrero (hat) making, the legacy of which has been immortalized on a beautiful mural at the Platero Barangay Hall.
Other times, the origin of the tradition has already been forgotten by the great span of time that has passed since the tradition began, but its remnants, like the sound of clashing coconut shells when the “maglalatik” (a native war dance) is being performed, remain remarkably identifiable. Some people still have a vivid image of how the tradition started, even the colorful stories behind them. For the Biñanenses, the stories and the feelings carry on, like the childhood memories of the sapateros (shoemakers) who learned early on this craft that puts premium on durability and comfort.
No one, however, could define why the traditions became identified as uniquely “Biñan”. But as one listens to the stories of these people, one gets the feeling that they already own the tradition as very Biñan. The fact that these are stories of the very people of the city about the crafts that have become a significant and crucial part of every Biñanense’s life is what makes these traditions truly and distinctly Biñan.
